Today's confectioner needs to be able to make a wide variety of products to the highest standards with consistent quality. Most products involve a cooking or evaporation stage in their production. Such products include:
The APV Paravap process permits continuous cooking/evaporation of all these products, whilst providing great flexibility, superb product quality and consistently controlled product. Its thin film heating process reduces volatile losses to give improved flavour and at the same time minimises the volume of product in the plant. |
Standard modular plants are available for production of 250 kg/hour to 1 tonne/hour or larger systems up to 6 tonnes/hour can be installed on site.
Heavy-duty APV scraped-surface heat exchangers can be used to cool and crystallise products such as fondant and fudge, with controlled, consistent crystal size.
