The quality and flavour of the extracted juices depend on ripeness, processing and storage conditions. Essential oil content of citrus fruit is important in maintaining the typical flavour profile of the juice. However, excessive oil content can give objectionable off-flavours. The behavior of each juice component must therefore be considered in developing the correct process parameters for a high quality product.
